Chargrilled Chicken Pitta Bread

Chicken Pitta Recipe

Chargrilled Chicken Pitta Bread

Serves 4
323 calories per serving

You’ll need:

Chicken Salad
2 large chicken breasts (170g each) 4 spring onions
1 calorie oil spray 30g baby spinach leaves
5g coriander leaves
Pickle mix For pickling
4tbsp rice wine vinegar 1 medium
1tbsp water 1 cucumber
1tsp sugar
1 bay leaf Yogurt dressing
4 coriander seeds 5g fresh mint leaves
1 star anise clove 40g plain Greek yogurt
1 lime (juice)
4 pitta breads


How to make:
Slice the chicken breasts in half length ways. Lightly coat the pieces in oil and season with salt and pepper. Place chicken into a hot griddle pan and cook for 2 minutes on one side then turn over and cook for 1 more minute. Turn the chicken over again and cook for 2 more minutes, making sure the chicken is cooked thoroughly.

2. To make the pickle mix, place all the pickle mix ingredients to a pan with water and bring to the boil. As soon as it boils, pour into a fresh container to cool.

3. Sprinkle salt on the sliced cucumber and onion and allow to sit for 2 minutes then mix together. Leave for a further 1 minute then rinse thoroughly with cold water to remove salt then drain and pat dry. Add to cooled pickle mix just before serving. Leave for at least 2 minutes, then drain away the pickle liquid and serve.

4. To make the yogurt dressing mic together all the ingredients and season to taste.

5. Warm the pitta bread and layer with salad, chicken and pickle. Top with the yogurt dressing, serve and enjoy!
