Protein Packed Prawn Stir-fry 😍🍤

Our stir-fried tiger prawns with noodles, bamboo shoots and chilli recipe takes just 45 minutes to make and serves 4. It’s so filling and packed with flavour that you won’t believe it’s only 353 calories per portion 😋

Prawns are rich in Omega-3 which helps reduce the risk of heart problems, making this recipe not only tasty and filling but also guilt-free.

You’ll need: 

Stir fry –

  • 400g tiger prawns
  • 300g cooked egg noodles
  • 1 chopped bird’s eye chilli
  • 60g bamboo shoots
  • 60g spring onions
  • 90g thinly sliced carrot
  • 10g fresh coriander
  • 40g thinly sliced water chestnuts
  • 5g sliced, peeled garlic
  • 10g finely cut fresh ginger
  • 80g fresh bean sprouts
  • 10g sesame seeds
  • 30ml sunflower oil

Sauce –

  • 1 tbspn chilli sauce
  • 1 tbspn sesame oil
  • 1 tbspn lime juice
  • 1 tbspn light soya sauce
  • Thai fish suace

The method: 

  • The most important part of this dish is to have everything chopped and ready, then the stir-fry is cooked at the last minute before serving
  • Place a wok on the heat to get very hot, add half the oil and quickly stir-fry the prawns – they will cook very quickly, probably in around 3 minutes
  • Once cooked remove these from the wok and keep warm
  • Place the wok back on the heat, add the remaining oil then the garlic, ginger and chilli. Leave this for 5 seconds then add the carrot and beansprouts
  • After 20 seconds, add the noodles, heat for 20-30 seconds longer then add the bamboo shoots, water chestnuts, spring onion and fresh coriander. Stir-fry this for 30 seconds
  • Finally, add the cooked prawns and the stir-fry sauce then quickly heat through
  • Add a splash of Thai fish sauce to finish
  • Remove from heat and serve
